One pot mince recipe: Five Easy Meals for Busy Single Parents


By the time you’ve handled school runs, cleaned the kitchen for the hundredth time, wiped a few tears (maybe even your own), and tried to breathe, cooking can feel like another battle. That’s why I started cooking smarter, not harder.

 The Base Recipe: Big Batch Mince Mix

This is your starting point. From this one pot mince recipe, you can create dinners like lasagna, wraps, spaghetti, cottage pie, and more.

Ingredients

  • 1.5 to 2 kg beef or turkey mince (lean)
  • 2 onions, diced
  • 4 to 5 garlic cloves, crushed
  • 2 peppers, chopped
  • 2 tins chopped tomatoes
  • 2 tablespoons tomato purée
  • 1 stock cube (beef or veg)
  • 1 teaspoon each: paprika, mixed herbs, black pepper
  • Salt to taste
  • Optional: A handful of frozen mixed vegetables

Method

  1. Sauté onions and garlic until soft
  2. Add mince and brown it well, breaking up lumps
  3. Stir in all remaining ingredients
  4. Simmer on low for 25 to 30 minutes until thick and flavorful
  5. Let it cool. Divide into 4 to 6 portions and freeze or store in the fridge

Tip for cottage pie lovers:
If you prefer a traditional cottage pie without a tomato base, you can simply remove one portion of cooked mince before adding the chopped tomatoes and purée. Set it aside and season it with a bit of gravy granules or beef stock instead.

 How to Store and Freeze It

 Turn It Into 5 Delicious Family Meals

The beauty of this base is that it gives you options. Even on the days when you don’t have the energy to think, this one pot mince recipe makes it easy to put food on the table.

1. Spaghetti Bolognese
Warm the mince and pour it over spaghetti or pasta
Top with cheese. Serve with salad or garlic bread

2. Cottage Pie
Place the mince in a baking dish, top with mashed potatoes, sprinkle cheese, and bake.
Use the tomato-free portion if you prefer a more traditional flavor

3. Wrap Night or Sloppy Joes
Add a spoon of ketchup or BBQ sauce to the mince and serve in wraps or buns

4. Lasagna
Layer mince with lasagna sheets, white sauce, and cheese. Bake until golden

5. Stuffed Jacket Potatoes

 Will 1.5 to 2 kg Be Enough?

Yes. If you’re cooking for a family of 3, 1.5 to 2 kg of mince will comfortably stretch across 5 meals.
Especially when the mince is served with carbs like pasta, potatoes, rice, or wraps, and paired with vegetables or salad.

If your kids are younger or lighter eaters, 1.5 kg is plenty. If everyone eats adult-sized portions, go with 2 kg for more generous servings or leftovers.

And of course, you don’t have to eat mince every day. I like to freeze a few portions and mix it up with other meals during the week like chicken, rice dishes, or quick soups.
